Beef Stew

Total Time:  4 hours
Ingredients:

2lbs beef stew meat
2 medium size yellow onions (large chunk / chop)
3 large carrots (chopped)
6 - 8 celery ribs (chopped)
5 small - medium white potatoes (peeled and chopped)
1/2lb Cremini or white mushrooms
8 - 10 cloves of garlic (minced)
2 bunches of parsley (finely chopped)
2 sprigs of rosemary (if you don't have fresh rosemary then dry is ok)
1 cup dry red wine
1 small (normal size) can of crushed tomato
6 cups beef broth
1/4 - 1/2 cup red wine vinegar (to taste)
2 Tbsp Worcestershire sauce
1 - 2 Tbsp Louisiana hot sauce
2 Tbsp kosher salt
1.5 - 2 Tbsp black pepper
1 Tbsp Montreal steak seasoning
1 tsp dry tarragon
1/4 cup flour
3 - 4 Tbsp olive oil
3 Tbsp butter
Instant mashed potato flakes
Procedure

Heat 3 - 4 Tbsp olive oil in a large stock pot over med-high heat.
Add stew beef, 1 Tbsp salt, 1 Tbsp Montreal steak seasoning, and 1 Tbsp black pepper to the pot. Cook until steak starts to brown, then add the garlic.
Add 1/4 cup of flour to the beef, and stir to coat, breaking up any clumps.
Add 1 cup red wine, and de-glaze the bottom of the pot.
When the wine starts to boil, add onions, celery, carrots, mushrooms, and stir to combine. Cook for one or two minutes.
Add the can of crushed tomato, and cook for a few minutes.
Add 6 cups of beef broth, stir, and bring to a boil then set heat to low.
If using dried herbs, stir them in now along with another pinch of salt and pepper.
Let cook for 2.5 - 3 hours until the beef is fall apart tender.
Once the beef is tender, taste the broth,add more salt or pepper if needed, and add the potatoes.
Continue to cook for 30 min or until potatoes are tender.
Add red wine vinegar, Worcestershire sauce, and hot sauce. Stir and taste. If needed, add more vinegar. It should taste slightly tangy but balanced.
Once the potatoes are cooked add the butter, and check thickness of the broth. If it needs to be thicker, sprinkle in some instant mashed potato flakes and stir. Add a little bit at a time until the desired thickness is achieved.
Add in chopped parsley, and any other fresh herbs, stir to combine, and let cook for another 3 - 5 minutes.
Serve and eat.
