Coop’s Crêpes

Total Time:  20 minutes

Ingredients:
2 cups flour
1.75 cups milk
5 or 6 eggs
1/3 cup sugar
6 Tbsp butter
2 or 3 drops of Vanilla extract
toppings such as fruit, jam, whipped cream, powdered sugar, etc.

Procedure:
Mix all ingredients except butter in a bowl. Mix well.
Heat a skillet on medium high heat and melt 1 Tbsp of butter to coat the surface.
Ladle in one mixture of the crepe batter, turning the skillet to coat, and quickly dumping the excess back into ladle to get as thin of a crepe coating as possible.
Cook until golden brown and flip. Cook about 30 seconds longer.
Finish by filling the center with toppings, folding over, and plating. Add more toppings if preferred.
