Beef Lo Mein

Total Time: 20 minutes

Ingredients
1 lb Sirloin Beef (sliced thin against the grain, 1/8″ slices. Can use chicken or pork as well if desired)
1 yellow onion (sliced)
3 – 4 cups Napa cabbage (sliced)
4 – 6 cloves garlic (minced)
4 – 6 green onions (sliced)
1/2 cup match stick carrots
16oz fresh lo mein noodles
2 Tbsp shaoxing wine
3 Tbsp light soy sauce (utsukushii or chinese light soy sauce, not low sodium)
6 Tbsp oyster sauce
3 tsp dark soy sauce
0.5 tsp white pepper
0.5 tsp sesame oil
3 Tbsp vegetable oil

Procedure
marinade meat with 2 Tbsp shaoxing wine, 1 Tbsp soy sauce, a pinch of salt, and black pepper. Let sit while prepping the rest of the ingredients.

Add 3 Tbsp vegetable oil to a smoking hot wok. Add garlic and meat to the wok and cook until half done. Add onion to the wok, and cook for a couple of minutes. Add carrots, cabbage, and green onions to the wok. Add cooked and drained noodles to the wok, and 2 Tbsp soy sauce, 6 Tbsp oyster sauce, 3 tsp dark soy sauce, 0.5 tsp sesame oil, and 0.5 tsp white pepper to the wok. Stir to combine, and continue to cook for another 1 or two minutes on high heat. Transfer to plate and serve.
