Ingredients
4 cups red sauce
1 Yellow Onion (chopped)
6 – 8 cloves of garlic (minced)
3 – 4 Tbsp Olive Oil
1 LB ground sweet Italian sausage
1 Large Container whole milk Ricotta cheese
2.5 Cups shredded whole milk mozzarella cheese
1/2 – 3/4 Cups grated Parmesan cheese
3 Tbsp dry parsley
2 eggs
1 LB Cooked Ziti Pasta (cooked just to al dente then cooled)
Procedure
Meat Mixture
Saute chopped onion in olive oil until soft.
add minced garlic and saute until soft.
add 1 lb ground sausage, slightly browned, drain fat and let cool.
Cheese Mixture
Combine the large container of Ricotta, 2 eggs, at least 1/2 cup of quality grated Parmesan, salt, pepper, 3 Tbsp of dry parsley. and 2 Cups Shredded Whole Milk Mozzarella.
Add cooled meat mixture and evenly combine.
Add Cheese mixture to pasta and gently combine well with hands.
Assembly
Liberally cover the bottom of a 9×13 tray with sauce, dump pasta mixture on top. tamp pan on counter to remove some any air pockets. Add a layer of shredded mozzarella cheese using remaining 0.5 cup.
Cover liberally with sauce and add grated Parmesan.
Cover with foil.
Bake at 350°F for 45min to 1 hour
